While the Maldives are open to UK tourists and seem perfect for social distancing, it is not on the UK travel corridor list yet. So if you want an alternative that is currently on the list, there is a hotel that offers the same overwater bungalows that could have come straight off a Maldivian island.
Stella Island Luxury Suites and Spa, is an Adults only hotel built around a lagoon-style pool that stretches over the entire resort. It gets a solid 5/5 on TripAdvisor which is not easy to come by. The hotel is on the island of Crete near Heraklion.
In the spa, guests can enjoy a great variety of services such as Sauna, Hammam, Jacuzzi, indoor heated pool, Massage rooms and Fitness room, along with the magnificent sea & pool views.
The hotel has a number of restaurants including a grill, buffet, Mediterranean and Asian.
There are several very luxurious rooms that are very similar to a Maldives style Bungalow. These start with an overwater bungalow:
Even the inside looks like you could be in Asia or the Maldives
and progress to the Grand Overwater bungalow which has a jacuzzi
If you are not so worried about being over water but want privacy, there are the island villas with a private pool.
The prices are not quite as bad as the Maldives but they aren’t cheap. Prices for the Overwater Bungalow start at £347 with half board or £370 all-inclusive. The entry level room is extremely cheap though with rooms starting at £117 in October for a luxury room with pool view on half board. At least on half board eating out locally is very cheap. The flights will also be a lot cheaper to make up for it starting at £364 in Club per person. BA’s sale has some good deals in Club Europe to Greece.

If you want a more family-style holiday, the sister hotel the Stella Palace has an offer on currently. The hotel has a water park and lagoon-style pools and currently has a flash sale with Lastminute.com. It offers 7 nights with economy flights from £650pp all-inclusive in September.
